Role Reversal and Bacon and Potato Mini Frittatas

After a 10 hour excursion to the movies Saturday, I woke up on Sunday feeling like I owed my family a great big “Thank you” for letting me go AWOL. I was sure making a good, stick-to-your-ribs Sunday breakfast was a nice way to start. I was thinking hashbrowns, bacon and eggs but maybe not quite so greasy, and after a little research, found these fairly healthy Cooking Light Muffin Cup Frittatas and knew that I had landed on the right recipe. They are stuffed with crumbled bacon, sauteed diced potatoes and peppers (in a little bacon grease!), and are topped with a smattering of grated cheddar.

Start Valentine’s Day on a High Note With Red Velvet Pancakes

Can you think of a better way to start your Valentine’s Day morning than with rich, soft, chocolaty Red Velvet Pancakes?!  I can’t either.  They even get served with a luscious, cream cheese dipping sauce.  Pretty sweet, right?— pun totally intended…that’s just how I roll.

Seriously, these are absolutely decadent and for the handful of readers I have from the Los Angeles area, they are a dead ringer for the ones served from L.A.’s famous Buttermilk food truck.  I have dreamt of these babies and craved them for days and now I can make them right in my own little kitchen…happy, happy me and now happy, happy you!

Pimped Out Low-Fat Fluffy Scones

Have you ever had an Emergency Chocolate Situation? I usually keep a bag of Ghirardelli bittersweet chocolate chips on hand for these moments. I eat at least three or four a day. I honestly can’t remember having gone an entire day without chocolate. Ever. So when I was craving something sweet, chocolatey and frankly buttery and fattening for our weekend breakfast, I immediately glanced over at “THE BAG”.

C’mon Over for Breakfast…Just Don’t Stay The Night Cinnamon Apple Waffles

I thought a nice breakfast worthy of company would be apropos at this time of year when guests come to stay.  These cinnamon spiced, apple diced waffles are perfection. Their flavor is full of fall and coziness and their nice texture is tender inside but crisp outside (if you play by the rules and whip the egg whites).

Ok, I haven’t been single for 20 years so this post isn’t what it seems from the title. Sorry if you were expecting some lament on how I don’t like to share my bed. Infact, I like to share my bed just fine with my hubby and sometimes my Golden Retriever curled up at my feet. Continue reading

Pear Fritters Have Sunk My Battleship

I know this must come as a great shock to you, but pear fritters are not the answer to your diet dilemma.  They are made with whole milk, deep fried and then rolled in sugar.  Does that not scream diet food?  In all seriousness though, these fritters are some heavenly cross between funnel cake from the fair (c’mon you know you love it), and a deliciously airy homemade doughnut.  These particular fried delights are elevated a touch as they are full of gingered pears and have a touch of lemon zest.

Once you are back from a vacation, it’s hard to get adjusted to the real world.  A world that does not wait for you and does not allow you to sit idly by an ocean while you sip a Mai Tai and read your favorite book.  Now that is was the life.
