Baking, a Love Story

Apple Insanity

I miss you all and yes, my blogging has been on the back burner friends. For those of you who know me and miss me and have been sending me messages, thank you so much. It’s very nice to know that I have been missed. Life has been more than a jumble this last summer, and I just can’t get myself to write new posts as of yet or even peruse other blogs.  Please don’t take my lack of commenting on your blogs personally.

Someday soon, hopefully,  Geni will get her groove back (yes, sometimes I refer to myself in the third person, but it’s just one of the oddities that makes me, me). But until then…I believe in sending you re-posts and reminders of deliciousness gone by. Because many of you have not been here for some of these taste bud teasing and pleasing posts. Until later my friends!

Love, Geni

I MUST start with my Apple and Mustard Glazed Pork Tenderloin with Apple Cider Biscuits, because this one post has brought Pinning glory to my blog and usually comes with rave reviews from my “adoring fans”. 🙂 This meal is literally Fall on a plate and it’s healthy, easy and pleases any dinner guest guaranteed.

Next on the list of my favorite apple delights are these Caramel Apple Bars. They are NAUGHTY but very NICE too. They are totally addicting and the caramel sauce that gets mixed in is stick-your-pinky-in-it-and-lick-it-off fabulous. Just don’t stick the licked pinky back in the sauce. It makes me TOTALLY CRAZY when chefs do that on Chopped! I can’t imagine that Mark, Samuel or Amanda consider SPIT as an appropriate ingredient. 😮

And then, may I introduce the perfect after school (or work…or lazy day…) snack…these spicy and tender Apple Softies!

This Caramel Apple Cupcake is a nice little treat for any Fall day.  It is just dripping with sticky caramel goodness and will not stick to your teeth either.

And last, but definitely not least, these Cinnamon Apple Waffles are the perfect start to any blustery autumn morning.  It’s the perfect way to hunker down, stay in and enjoy a lazy Sunday morning.

I hope you enjoy these Apple-y treats!

  1. Geni, you’ve still got your groove! Some days it just shines brighter than others 🙂 I’m not sure where to start with all these apple recipes, but the best way to try is from waffles and eat my way through that pork tenderloin and naughty caramel apple bars! I think those bars will make a nice little treat in the neighborhood…that way I just get a taste and share the love!

  2. Geni is too cool to lose her groove 😉

  7. I haven’t done as much blogging this summer as I used to do… oh, well…life goes on…

It’s the perfect for something apple-y …I bought some rather tart Macs the other day and it will be apple cobbler today… or some day soon…. I love apple cobbler… I’m going to try those apple squares too ..they sound yummy.

I hate lots of things about chopped… not only the finger in the sauce… ick… no wonder I hate going to restaurants… when ya know what those cooks and so called chefs are up to…. plus I used to hang out in one when my Mom worked as a waitress for several years…. give me home cooking where I know exactly what happens in my clean kitchen….

  8. I totally feel ya!! I’ve been so behind on posting these past few months. Life just gets in the way sometimes! We need to grab lunch again soon!
