These devastatingly delicious, over-the-top, dark chocolate cupcakes with get yourself drunk Baileys Buttercream are GLUTEN FREE! Who knew GF could be fabulous?! I have also included my very best all-purpose flour dark chocolate cupcakes as well so it’s win win all over S&C (if you missed the last post, I have recently converted to referring to my blog as S&C because, like J.Lo, I am too cool to spell out my name…or I’m just that lazy…hmmm).

I miss you all and yes, my blogging has been on the back burner friends. For those of you who know me and miss me and have been sending me messages, thank you so much. It’s very nice to know that I have been missed. Life has been more than a jumble this last summer, and I just can’t get myself to write new posts as of yet or even peruse other blogs. Please don’t take my lack of commenting on your blogs personally.
Someday soon, hopefully, Geni will get her groove back (yes, sometimes I refer to myself in the third person, but it’s just one of the oddities that makes me, me). I MUST start with my Apple and Mustard Glazed Pork Tenderloin with Apple Cider Biscuits, because this one post has brought Pinning glory to my blog and usually comes with rave reviews from my “adoring fans”. 🙂 This meal is literally Fall on a plate and it’s healthy, easy and pleases any dinner guest guaranteed.

I wish I could send you one of these sweet little mini coconut, cream-filled cupcakes with Matcha frosting. They are soft, with a tender crumb, have a mild dreamy coconut flavor, and the rich, smooth frosting is perfectly offset by earthy green tea.
Parsnip is the new carrot….didn’t ya know? My sister-in-law introduced me to this very versatile and sweet root vegetable and I have been in love ever since. They can be roasted, plain and simple with olive oil and salt and pepper or boiled and then pureed as a delicious and healthier substitute for mashed potatoes.
Or…they can shine in all their glory in this soft maple spice cake.
