Joy, it can come from touching the soft fur of your pet, taking a lick of a drippy ice cream cone and simply feeling a breeze on a warm day.

Whether you have big plans, little plans or no plans, you can whip up one of these spring-y sweets to help celebrate the day. I have rated these recipes based on difficulty and time needed so you can choose the one that fits into your life.
Braided Bread Stuffed with Lemon Curd. This soft, delicate, flaky filled bread is so tangy and sweet. It is really a perfectly beautiful bread to BRING to a brunch, one that you are not hosting and you are only responsible for ONE THING. Because this one is a solid 9/10 in difficulty level (maybe a 10…let’s not mince words) and is totally worth it if you have the time and energy.
I am honest to a fault. Seriously to a fault. I always bring baked goods and then instantly blurt out ANYTHING minuscule that went awry, as if someone slipped truth serum into my coffee. My most recent admission was,..”I got wrapped up in watching re-runs of Chuck and may have left these muffins in a stitch too long.”
The pictures you see here, unfortunately, are from my last year’s post of my AP Flour pumpkin pancakes. My problem was that I kept making my delicious, fabulously soft, not gritty and very fluffy GF pumpkin pancakes and running out of time to take pictures. Life’s a bit of a bumpy ride for the moment at best (more like an unpaved road in a construction zone. See? Honest to a fault).

Hurdles; They slow us down and are barriers to get where we want to go, but ultimately, they encourage us to stretch and learn. Gluten free baking was a big hurdle for me. Daunting, difficult, and rather unrewarding…at first.
Do you have one eye open most mornings, trip over the dog as you shuffle to the kitchen and barely pour your waiting pre-programmed cup of coffee into your mug? Or, if you are like one of my best friends, she can’t even get that far into her morning without a pinch hitter. Her hubby brings her a first cup of the day in bed before she can even attempt to face her day. Yeah, there are men like that, or at least men who are smart enough to know what’s good for them. 😉
Can you think of a better way to start your Valentine’s Day morning than with rich, soft, chocolaty Red Velvet Pancakes?! I can’t either. They even get served with a luscious, cream cheese dipping sauce. Pretty sweet, right?— pun totally intended…that’s just how I roll.
Want a breakfast that is decadent, homey, soft and spicy? Then you have come to the right place my friends. These Gluten Free Pumpkin Waffles are all that and more. They are the perfect answer to feeding those guests who need to eat gluten free and everyone who needs to eat a tasty breakfast without the grainy or gummy texture some GF products can be known for.
I know, for most of us gluten free doesn’t exactly spell delicious. But these pancakes are heavenly. I am not a liar, at least I am fairly sure of that, and honestly these pancakes are spicy, soft, tender and not one iota grainy which some gluten free products can be infamous for.
I miss you all and yes, my blogging has been on the back burner friends. For those of you who know me and miss me and have been sending me messages, thank you so much. It’s very nice to know that I have been missed. Life has been more than a jumble this last summer, and I just can’t get myself to write new posts as of yet or even peruse other blogs. Please don’t take my lack of commenting on your blogs personally.
Someday soon, hopefully, Geni will get her groove back (yes, sometimes I refer to myself in the third person, but it’s just one of the oddities that makes me, me). But until then…I believe in sending you re-posts and reminders of deliciousness gone by. Because many of you have not been here for some of these taste bud teasing and pleasing posts. Until later my friends!
Love, Geni
I MUST start with my Apple and Mustard Glazed Pork Tenderloin with Apple Cider Biscuits, because this one post has brought Pinning glory to my blog and usually comes with rave reviews from my “adoring fans”. 🙂 This meal is literally Fall on a plate and it’s healthy, easy and pleases any dinner guest guaranteed.
